Here are the ingredients for Instant Pot Lava Cake:
Make Lava Cake with Cocoa Powder?
For our first experiment, we used a combination of Bittersweet Chocolate + Cocoa Powder. The result was too rich and dense, so we decided to omit the cocoa powder in our final Instant Pot Lava Cake Recipe.
Which Chocolate to Use for Lava Cake in Instant Pot?
We experimented our lava cake recipe with 3.5oz (100g) Lindt 70% Cacao Dark Chocolate bar & 4 oz (113g) Hershey’s 70% chocolate chunks. They both worked fine. 🙂
Melt Chocolate and Unsalted Butter
Melt 3.5oz – 4oz (100g – 113g) 70% cacao dark chocolate with ½ cup (125g) unsalted butter.
*Pro Tip: You can use the double boiler method or the microwave (30 seconds interval & mix).
Make Egg Mixture
In a large mixing bowl, add 2 large eggs, 2 large egg yolks, ¼ cup (52g) granulated sugar, and a pinch of salt.
Mix ingredients for 1 minute with a hand mixer using medium speed.
Make Chocolate Lava Cake Mixture
Slowly pour in and mix the chocolate-butter mixture with the egg mixture.
*Pro Tips: The chocolate-butter mixture can be hot, so you don’t want to pour them all in at once and cook the eggs. A spatula will work great for this.
Add ½ tsp (2.5ml) vanilla extract.
Then sift in 1 tbsp (9g) all-purpose flour.
Mix everything together with a spatula until everything is well mixed.
Pressure Cook Chocolate Lava Cake
If you are planning to remove the Instant Pot Cakes from the ramekins to serve, spray the ramekins with cooking spray.
*Pro Tip: If you’re serving the Instant Pot Cakes with the ramekins (more convenient & less messy to eat), skip spraying the ramekins with cooking spray.
Carefully pour the chocolate lava cake mixture into 4 x 6oz-ramekins.
Then tap the ramekins against the counter a few times to remove air bubbles.
Add 1 cup (250ml) cold water in Instant Pot.
Place trivet in Instant Pot, then stack the ramekins on top.
Close lid and pressure cook at High Pressure for 7 – 9 minutes + Quick Release
*Pressure Cooking Times:
- For Thicker Pyrex Glass Ramekins: High Pressure 8 – 9 minutes + Quick Release
- For Standard 6oz Ramekins: High Pressure 7 minutes + Quick Release
Turn Venting Knob to Venting position to quickly release the pressure.
Carefully open the lid (avoid dripping the condensation on the lava cakes!)
Serve Instant Pot Chocolate Lava Cake
Quickly place the ramekins on a cooling rack, then serve immediately once the ramekins are cooled to touch.
*Pro Tip: The Instant Pot Lava Cake will continue to cook while resting, so it’s best to serve them as soon as possible! And I mean, who can resist not diving in right away?! hehe~ 😛
Sift powdered sugar on the Instant Pot Lava Cake, then decorate it with a strawberry.
You can also serve with a scoop (or more) of your favorite ice-cream!
