My dad absolutely loves going to yum cha 飲茶 as far back as I can remember. And Black Bean Sauce Spare Ribs and Rice 豉汁排骨飯 is one of his favorites! A must-order every time we go “Dim Sum”-ing.
Ever since he attended Chinese culinary school, he makes a lot of dim sums at home, like these Shumai Pork Dumplings. And I was his most avid taste-tester chomping down all his experiments. hehe~
So this year’s Father’s Day, we’ve recreated my Dad’s favorite Spare Ribs and Rice in Instant Pot!
You won’t believe how Easy it is to make in the Instant Pot, and how Tasty it comes out!!
- Spareribs – super tender with a bite, moist & juicy, real flavourful
- Rice – packed with fragrance and soaked with flavors from black bean sauce marinade & spare ribs
- Garnish – fresh green onions add a refreshing crunch while chili spices it up a bit
Super flavorful & comforting meal that is so appetizing & easy to eat. We accidentally ate up all the extra portion meant to be packed for lunch! oops… 😛

Step-by-Step Guide: Instant Pot Spare Ribs and Rice
Prepare Ingredients for Instant Pot Spare Ribs and Rice.
Marinate Spare Ribs
Place 1lb (454g) pork spare ribs in a mixing bowl.
Add in 1.5 tbsp (22.5g) black bean sauce, 1 tbsp (15ml) regular soy sauce, 1 tbsp (15ml) Shaoxing wine or water, 1 tbsp (15g) grated ginger, 3 (14g) minced garlic cloves, 1 tsp (5ml) sesame oil, 1 tsp (4g) sugar, 1 tsp (5ml) fish sauce, and a pinch of white pepper.
Mix well and marinate for at least 30 minutes and up to overnight in the fridge.
Pressure Cook Spare Ribs and Rice
Mix marinated pork spare ribs with 1 tbsp (15ml) oil and place them in the Instant Pot.
*Pro Tip 1: Try to fill the whole bottom of Instant Pot with a single layer of spare ribs (as shown in below photo).
Layer 1 1/2 cup (345g) Jasmine rice on the spare ribs and then add in 1 1/2 cup (375ml) cold water.
If the rice is rinsed, drain well and use 1 1/4 cup (310ml) cold water instead.
*Pro Tip 2: Ensure to place spare ribs first at the bottom of the pot, then rice on top. Don’t change the order (as shown in below photo).
*Pro Tip 3: Ensure all the rice are submerged in the liquid.
Close the lid and turn the Venting Knob to Sealing Position.
- Pressure Cooking Method: Pressure cook at High Pressure for 13 minutes, then 10 minutes Natural Release.
If the Floating Valve doesn’t drop after 10 minutes, turn the Venting Knob to Venting Position to release the remaining pressure.
Season and Serve Instant Pot Spare Ribs and Rice
Fluff and gently mix the spare ribs and rice.
Taste a spoonful and season with more salt or soy sauce if necessary.
Garnish with finely sliced green onion.
Add a Thai chili if you want to spice it up!
Serve immediately 🙂
