Tools for Cooking Spinach Artichoke Dip in Instant Pot
Preparation
First, drain and squeeze the spinach to remove as much moisture as possible.
Then, drain and roughly chop the artichoke hearts.
Saute Onions and Garlic
Press “Saute” button to “Sauté Less” function to heat up Instant Pot Pressure Cooker. It will switch to “ON” on the screen.
If you’re using Instant Pot Duo Crisp – press “Saute” button to “Saute Lo” and press “Start”.
Wait until it says “HOT” on the screen (takes roughly 8 minutes).
First, add 3 tbsp unsalted butter (45g) in Instant Pot’s inner pot, and ensure the whole bottom is coated with butter.
Add minced onion, minced garlic, and a pinch of salt in Instant Pot, then let them cook for 5 minutes, and stir occasionally.
*Note: This softens the onion, and brings out the onion’s natural sweetness.
Then, you can turn off the heat.
*Note: If you are tight on time, you can skip this step and use ¼ tsp garlic powder and ¼ tsp onion powder instead in Step 2.
Make Spinach Artichoke Mixture
In a large mixing bowl, mix together 8oz (227g) soften cream cheese, chopped artichoke hearts, chopped spinach, ½ cup (96g) shredded Gruyere cheese, ½ cup (96g) shredded mozzarella cheese, ½ cup (96g) finely grated Parmesan cheese, and ½ tsp (0.5g) Italian seasoning.
*Pro Tip: If you are planning to melt some cheese on top, reserve 2 tablespoons of mozzarella cheese and Parmesan cheese for later.
Then, mix the onion butter mixture into the spinach cream cheese mixture.
*Note: The mixture will be quite hard to mix in the beginning, but the residual heat from the onion butter mixture will make the mixing a lot easier.
Now, give it a taste and season with salt and freshly ground black pepper (for reference, we used a large pinch of salt to season this properly).
Transfer everything into a cake pan, ramekins, or oven safe pan that fits in your Instant Pot Pressure Cooker.
*Note: We used the Fat Daddio Round Cake Pan - 6x3 inch for this easy spinach artichoke dip recipe.
